Lemon rice is another recipe, you should have tried atleast once. This cannot be considered just as a dish. Instead, this one has got some medicinal values. In ayurveda, it suggests that one who east this dish can treat vaadha (rheumatism), pitha (obesity) and kapha (nausea).

The quantity of the ingredients given here are meant for 2 people.

Things needed:

Basmati rice – 1 cup
mung dal or Urad dal – 1 tbsp
Water – 2 cups
Fresh lime juice – 1 tbsp
Mustard seeds – 1/2 tbsp
Turmeric powder – 1/2 tbsp
Hing – 1 pinch
Whole cumin seeds – 1 tbsp
Ghee – 2 tbsp
Coriander Leaves – 1 tbsp
Grated coconut – 2 tbsp
Salt – To taste

Directions to prepare:

  1. Cook the neatly washed Basmati rice with Mung dal and water for around 10-12 minutes.
  2. Now, melt the ghee and saute the spice in the melted ghee in a frying pan at full flame.
  3. Now, lets proceed with the mixing part. Mix the cooked rice and sauted spice with lime juice.
  4. Add salt to taste.
  5. The dish is ready and in order to decorate the mixed dish, put some coriander leaves and grated coconut (only if it’s available)
